  1. Take 125 g spaghetti
  2. Get 50 g guanciale
  3. Take 1 clove garlic

  8. Get (parsley)

The ingredients are simple—just spaghetti (or other long pasta), and the carbonara is made with pancetta or bacon, eggs, Parmesan, a little olive oil, salt and pepper. This is a favorite late-night dinner for my husband and I. John's favorite meal is carbonara; he always asks for it on his birthday. We also make it when he plays with his rock band.

Instructions to make Carbonara:
  1. Boil the pasta in medium salted water (1tbsp/l)
  2. Dice the guanciale finely and heat it up with a dash of olive oil in a pan. When the fat has rendered, add thinly sliced garlic and fry on medium heat until the guanciale is crispy and the garlic just starts to take some colour.
  3. In the meantime, in a large bowl, whisk together grated Grana, egg, cream, cracked black pepper, and optionally a small handful of chopped parsley.
  4. Toss the spaghetti in the pan with the guanciale, garlic and a bit of the pasta water until evenly coated
  5. Add the hot pasta mixture to the bowl with the sauce and mix well until the egg starts to set and evenly coats the pasta
  6. Serve with more grated Grana and chopped parsley

John's favorite meal is carbonara; he always asks for it on his birthday. We also make it when he plays with his rock band. John doesn't like to eat dinner before a show so this has become our favorite midnight supper after a gig. Pasta carbonara is best fresh, but if you're going to reheat, it is best to reheat pasta carbonara over the stove, and not in the microwave. I can't eat, think about, dream about, or even remotely consider Pasta Carbonara without thinking of Heartburn, the Meryl Streep/Jack Nicholson movie from the eighties that I both love and hate.
