- Make ready 1 pinch Nutmeg powder
Combine the chicken and marinade ingredients (soy sauce, cornstarch, sesame oil, and oil), and set aside while you prepare the rest of the ingredients. Next, combine the hot water, sugar, regular or light soy sauce, dark soy sauce, salt and white pepper. Chicken Fried Rice, made on a sheet pan in the oven! It is so easy and comes together quick.

- In a pan, heat oil. Then add the onion, minced ginger-garlic and saute for a minute. Once this is done, add in all the veggies, chicken and stir fry for atleast 10-12 minutes. Then cover the lid and let it simmer on a low heat until done.
- Meanwhile, in a cooking pot add butter or ghee. To this, add in Bay leaves. You can also add other whole masalas such as cinnamon, black peppercorns and a pinch of nutmeg which is purely optional. Nutmeg can be omitted.
- After about a minute, then add in the soaked and drained rice. (The rice shouldn't be soaked for long. The more it gets soaked, the more delicate the rice will be.)
- Next, add water to a pot. (As easy this step may seem, it is the place where many of us tend to go wrong. Water should always be added proportionally. For one glass of rice that has been drained and soaked, 2 glasses of water will be required. This is the correct proportion.)
- Wait till the water boils before covering the pot with a lid. Don't overmix or the rice will break. After the rice is done, transfer the chicken to the pot and mix well. Allow this to stand for another 5 minutes before serving. Or you can use cooked rice and even leftover rice for this recipe.
- This awesome fusion can be served with any Indian dish with gravy or chicken manchurian or any Chinese side dish as well.

I was pleasantly surprised to find that this came out just as good as the fried rice I get at my favorite local Thai restaurant. I followed the recipe in terms of ingredients, but here are a few extra things I did: I pounded my chicken breasts flat, cut them up into strips, and quickly stir fried them in a little olive oil and just a pinch of salt.
