Combine mashed potatoes, onion, cottage cheese, salt and pepper in a bowl. Heat the butter on a flat pan and grill sandwiches on both sides until golden brown. In small bowl, combine the goat cheese and balsamic vinegar and mix until well combined. The popular Bombay sandwich doesn't actually has cheese nor is it grilled but since I added both, we call this Bombay Veggie Grilled Cheese Sandwich.

- Peel and mash the boiled potatoes. Heat oil in a kadhai and add chopped onions, capsicum ginger and green chilli. Saute till the onions become translucent. Thereafter add tomatoes and again saute for 1-2 minutes till the tomatoes become a little soft.
- Now add the boiled corn, red chilli powder, bhuna jeera powder, amchur, dhaniya powder and salt to taste. Saute well then add the mashed potatoes.
- Add fresh coriander leaves. Let this mixture cool.
- Then take a bread slice and spread a little potato mixture on it. Place a cheese slice over it and cover with another slice of bread. Apply butter or oil on both the sides and grill the sandwiches in a toaster or on a tawa. Repeat the same process for the rest of the bread slices.
- Serve hot with mint-coriander chutney or tomato ketchup and a beverage of your choice.
